Country Quail

30 Dove breasts
1 lb Bacon
1 medium onion, thinly sliced
2 eggs
1 cup half and half
1 cup whole milk
1 teaspoon sweet paprika
Salt and pepper

Direction:

Preheat oven to 180 degrees. In a large skillet, fry bacon until crisp. Place bacon slices on paper towel to drain of excess stout. Leaving the bacon juices in the skillet, brown sliced onion and dove breasts in the over medium heat, seasoning with salt and pepper. Remove birds and onions from skillet and place in preheated oven to keep warm. Pour off all but 3 tablespoons of bacon stout from skillet. Mix the eggs, milk and half and half together. Add egg mixture to the bacon stout in the skillet and simmer over low heat, stirring constantly, just long enough to thicken. Do not bring to a boil. Stir in paprika and serve sauce with quail. This is fantastic served with potatoes!

After you taste this quail you will be asking yourself why haven’t i tried this before, forget the chicken and the other birds quail should be the state bird for all 50 states that’s how excellent this is. It will be making your mouth water everytime you see a quail/dove flying by, because all you will reckon of is the juicyness of it in your mouth. I was relentless to try it at first as well but once i did it is my top dish to serve to family and freidns. Evenfor a girl it makes a nice meal.
