Prep Time: 10 minutes
Cooking Time: 9-12 minutes


4 small yams or sweet potatoes
2 tbsp. butter
2 medium Fuji apples, peeled, cored and diced
1/2-cup honey
1 tsp. cinnamon
2 tbsp. walnuts or pecans


1) Wash yams and pierce with a fork
2) Place on a microwave safe plate
3) Microwave on High for 9-12 minutes or until soft
4) Melt butter in a small skillet
5) Add apples and cook for 5 minutes
6) Stir in honey and cinnamon
7) Cook slowly stirring frequently
8) Slit the top of the yams and fluff the insides
9) Spoon equal amount of the apple mixture over the top of each yam
10)Sprinkle with nuts

Yams and sweet potatoes are both rich in Vitamin A and Vitamin C (really carotene, which the body converts to Vitamin A). Sweet potatoes are very tasty and naturally sweet.
