Trudy is my sister-in-law and most generously gave me this cookie recipe to add to my web site. Over the years I have eaten more than my share of her tasty pumpkin chocolate chip cookies. Trudy is a gorgeous woman not only in the kitchen, but just about anywhere else in the house. Not only is she gorgeous to look at, but also she has an inner beauty that lets you feel comfortable when you are around her. My brother might get a small suspicious about my relationship with his wife after reading this, but I’m really just in like with her cookies. Or maybe it is just the memories of the heady aroma of those exceptionally tasty pumpkin chocolate chip cookies. Needless to say she is an exceptional baker and cook. Trudy likes to experiment with recipes she finds in the media and she always makes them her own by changing them around a bit.

Trudy’s pumpkin chocolate chip cookies are the most well loved cookies on our web site. I’m not crazy about pumpkin, but these cookies are so excellent they make you forget that you are eating a large squash like plant. 2 cups brown sugar

4 eggs

2 cups mashed pumpkin

1/2 tsp lemon extract

2 cups nuts

2 cups raisins

2 cups chocolate chips

4 cups flour

2 tsp. cinnamon

1 tsp. salt

1 tsp. ground cloves

1 tsp. nutmeg

1 tsp. ginger

2 tsp. baking soda

Nuts and raisins are optional. Mix all ingredients together thoroughly. Scoop out cookie dough with a tablespoon or larger, using heaping spoonfuls of cookie dough, place on an ungreased cookie sheet. Preheat oven and bake cookies at 400° for 12-15 minutes. Cooking time may vary according to scoop
