Hot Drinks to Welcome The New Year With

Champagne at midnight gets ancient hat after many years, so we celebrate with drinks of a different nature. We make them with or without alcohol, that way the young ones feel vital that they can have a cup of cheer also with the grownups.

I always make a large pot of egg coffee. I top it off with a large dollop of real whipped cream for the kids and a shot of kahlua or creme de cacao for adults. I wrote about egg coffee in an earlier article.

Next on the list is real home made hot chocolate. To make it I cook 2-1/2 1-ounce squares of unsweetened Belgian chocolate and 1/2-cup of water over low heat until it gets thick. Stir it constantly so it does not burn. Next I add 3/4-cup of sugar and 1/2-teaspoon salt and cook for 4-minutes. I let that cool and then I fold in 1/2-cup of heavy cream that I have whipped. I keep that in the refrigerator.

To serve this drink, I place 1-2-heaping tablespoons into a cup and fill the cup with hot milk. Be sure to stir it well before drinking. The young ones have this plain, but the grownups like either a shot of creme de menthe, brandy, rum or kahlua added.

Another drink I make is eggnog. I scald 3-cups of milk and 1-cup of light cream. Then I beat 2-egg yolks with 1/3-cup of sugar and1/4-teaspoon salt. I temper the egg yolks and slowly stir in the milk. I cook the mixture, stirring constantly until it coats a spoon. When it is cool I add 1-teaspoon vanilla and blend it til it is smooth.

Next I beat 3-egg whites with 3-tablespoons of sugar until soft peaks form. I add the egg whites to the custard and mix it up thoroughly and chill it 4-5-hours. To serve I pour the chilled eggnog into a punch bowl and top with mounds of real whipped cream. The children drink this plain, but the grownups always have a shot of rum or brandy added to their cups. It makes for a HAPPY NEW YEAR!!
