Low Salt Sausages – MSG

Being from Louisiana I have had a long like affair with every known brand of sausage that was ever made. The process meats know on the market are filled with salt and stout. I had a bout with congestive heart failure and my doctor told me to cut the salt and stout out of my diet. Therefore I started a low stout low salt diet. My divorce from sausage was not a clean one.

I still take medication for the heart failure. But I learned to make my own sausage as well. I bought a hand grinder for home. The small batches that I make. I keep my homemade sausage on hand in the frig or freezer just in case I get the urge to fry or grill. Be aware of the ingredients that are hidden in the processed meats that you consume.

A fantastic percentage of the sausage that is made today contains MSG (monosodium glutamate,) table salt or sea salt. Some of the ingredients that are used to make sausage and other lunch meats are the scraps and left over parts meats and entrails that are smiled and included in the final product.

The only way to avoid MSG is to buy free range chicken, beef and pork products. But if you buy prepackaged foods from any of the major chain stores and even the mom and pop stores MSG is present. MSG is called flavor enhancer, natural seasonings, hydrolyzed vegetable protein (HVP), hydrolyzed plant protein (HPP), autolyzed plant protein, sodium caseinate. You will have a hard time finding prepared foods with out MSG

The following foods often contain MSG:
Natural Flavoring (including natural beef, chicken and pork flavoring) Bouillon, Broth, Stock, Tomato paste, textured protein, Whey protein. Dried yeasts, torula yeast, and yeast nutrients

The health effects of MSG are overwhelming. The number one health problem is obesity. Which leads to other major health issues. Yes quick food chains use massive amounts of MSG this make their food addictive. So they are making money at the expense of your health and pocket book.

Look around the internet you will find any number of sausage recipes. Knowledge is power. So make your own sausages decrease the amount of salt cut back on the stout. If you are not able to buy free range meats, the meat that you buy and grind from the local chain will still have less sodium and MSG compared to the processed brands that are on the shelf today. Here is my favorite sausage recipe.

5 pounds pork, grind medium

1 1/2 teaspoons black pepper

1 teaspoons salt

1 teaspoon cayenne pepper

3 teaspoons sage, ground

3/4 teaspoon allspice

1 1/2 bay leaves

1 cup cold water
One teaspoon of salt will go a long way. Have some sausage on hand just in case.
