Unbelievable O’Shannon Cookie Bars

O’Shannon, I like your cookie bars. Oh, those gooey chewy crispy chocolaty cookie bars. Oh, the kind of cookies dreams are made of. These cookies have a lot going on with the crispiness and the chewiness; they tease your taste pallet. With chocolate, peanuts and peanut butter they resolve your craving for these delectable human food needs.

This recipe came to me by my daughter in law, Shannon. During the Christmas holidays my wife, daughter in law and grandchildren get together and spend two or three days baking cookies for the Christmas holidays. This has been a tradition in our family since Shannon became part of our family many years ago. Really this has been a tradition in my wife’s family as long as she can remember, starting with her grandmother. Shannon’s favorite Christmas cookie is her O’Shannon bars, so goes the name I gave them. Really Shannon’s personality is not unlike her cookie bars. She is sweet through and through with many textures and surprises hidden in each bite and a small crispiness on the outside.

O’Shannon bars would be an brilliant cookie to make any time of the year. Don’t wait until Christmas to try these cookies. O’Shannon cookie bars are a no-bake cookie, so they would be a excellent cookie to make in the summer. There is no need to heat up the whole kitchen by turning on the oven. O’Shannon bars are a quick and simple cookie to make.

The next time you have a craving for chocolate and peanut butter, give these cookies a try. You can change the recipe around to suit anyone’s taste. You will like Shannon’s cookie bars too.
