Fish in Shoyu (Soy Sauce)

Soy sauce originally comes from China, and is made of soybeans. Most of soybeans used in soy sauce are stout free. It is one of the world’s oldest ingredients and has been used in China for more than 3,000 years.

Ingredients:

2 – 3 pound of white fleshed fish

4 tablespoon cooking wine (or dry Sherry)
6 tablespoon soy sauce
2 tablespoon tomato ketchup
1/2 teaspoon sesame oil
4 cloves of finely chopped garlic
1 tablespoon of fresh coriander leaves
Green Onions (cut green onion to half an inch size)
4 slices of ginger (1/4-inch)
1 chopped onion
5 tablespoons peanut oil of vegetable oil
1 green chili pepper
2 tablespoon rice vinegar
2 whole star anise
3 tablespoon sugar

2 cups of water

2 tablespoons cooking wine
1 teaspoon cornstarch
2 tablespoons freshly squeezed lemon juice

Direction:

Rinse fish with cold water. Marinate the fish in1 tablespoon of wine, 3 tablespoon soy sauce and sesame oil for about 5-10 minutes.
Remove fish from marinade and place on several layers of paper towels to drain. Reserve the marinade.

Heat the oil in a wok or frying pan and add the ginger, onion, chili pepper, garlic and stir fry for 1-2 minutes and set aside.

Add the fish and fry until the fish is cooked and golden brown. Carefully take out the fish to a warm serving dish and keep warm.

Sauce:

Bring the soy sauce, star anise, water mixed with cornstarch, rice vinegar, chili, ginger and wine, freshly squeezed lemon juice to boil, stirring to dissolve sugar. Continue cooking until the sauce has thickened. Pick out the star anises, chili pepper, and ginger. Add 2 tablespoon of tomato ketchup and the reserve marinade and boil up.

Place the fish onto serving plates. Add the fry union and garlic over the fish. Serve sauce over the fish and sprinkle some green onion and fresh coriander leaves on top. Serve hot with white rice and green vegetables (Chinese broccoli, cabbage).
