Some people believe that wine can only be made from grapes, but that is fake. Have you ever heard of blueberry wine, or strawberry wine? Sugar, acid, tannin, and yeast are the main components of wine. Sugar is usually found in the normal variety of table sugar. Acids are usually one of several, or a blend of all. These are tartaric, malic, and citric acid. If you forget the step of adding yeast to the wine, you will end up with some tasty vinegar – if you are interested in such a thing! Tannin is also known as tannic acid. It is a substance found in the stems, skins, and seeds of grapes, as well as oak leaves and pear skins. It is what gives the wine flavor its “bite”. Yeast is generally a fungus capable of fermenting carbohydrates. It is a living organism, and needs to be “activated” with warm water before added to the wine mixture.

In order to extract the flavor from fruit for wine, all that means is simple – squeeze out the juice. This can be done in lots of various ways, from the traditional stomping of the grapes, to buying a juice concentrate – like preservative-free apple cider (it needs to be preservative free!). When working with some harder type of winemaking substances like bark, flowers, herbs, or roots, it is best to steep them in cold water. Sometimes, hot or boiling water is used, but that may not flavor the water well enough to use as a juice substitute (but, it may bring out the color of the item better).

Some people believe that med, a mixture of fermented honey and water, is the same as wine. That distinction is truly up to you. Granted, the method of making such a thing is very similar, but it is a truly different character of flavors than a wine would be. Now, there is some truth that different honeys make different flavors – just as different grapes do. Mead is also made not only from different honey, but also can be made from different types of acid – lemon, lime, or orange.

Whether wine or mead, one of the largest ways to mess up a batch would to add too much of one fruit. If three pounds makes excellent wine, then four will make it brilliant, right? Not so. Changing a recipe changes the flavor, so until you become more experienced, perhaps you should stick to simple recipes first.
