Shortbread Fingers


1¼-cups All purpose flour
4-tablespoons Brown Sugar
½-cup Butter
½-cup Finely chopped pecans
½-teaspoon Vanilla
3-ounces Baking chocolate or chocolate chips chopped
2-teaspoons Shortening

Powdered sugar


Combine flour an brown sugar in a medium bowl. Blend in butter until mixture resembles fine crumbs and starts to cling. Stir in finely chopped nuts and vanilla. Form mixture into a ball and knead until smooth.

Lightly flour a surface, roll out dough into an 8×6 rectangle. Using a long, sharp knife, cut dough in half lengthwise; cut crosswise into 1 inch wide strips. Place about 1 inch apart on an ungreased cookie sheet.

Bake in a 325° over for about 22 minutes or until bottoms just start to brown. Transfer cookies to a wire rack and let cool.

In a small heavy saucepan melt chocolate chips or baking squares and shortening over low heat, stirring constantly. Dip one end of each cookie into melted chocolate. Let cool and sprinkle with powdered sugar. Serve or store in airtight container in the refrigerator.

Makes about 16 cookies

Note: At Christmas time just add a small red or green food coloring to make them gorgeous and tasty or different colors for other holidays. Sometimes I sprinkle a small flaked coconut over the cookies as I take them out of the oven when they are still hot.
