A Tasty Discovery in Florence

Trattoria 4 Leoni sits waiting for you off the tourist track in silent, unassuming, small Piazza della Passera on the south side of the River Arno, between the Pitti Palace and Piazza Santo Spirito.

Friends of friends had highly recommended the tortelli stuffed with pears topped with bits of fresh asparagus and taleggio cheese sauce. Absolutely tasty! As were my crostinis of porcini mushrooms, chicken liver paste and fresh tomatoes. My Vancouver friends hadn’t tried Vin Santo with almond biscotti, so I corrupted them with the perfect way to end our very tasty dinner.

Potato and French Bean Loaf

500 gr./ 18 oz. potatoes

250 gr./ 9 oz French beans

4 handfuls parmesan cheese

1 carrot

1 onion

1 clove garlic

olive oil

oregano

bread crumbs

4 eggs

salt

a few twigs of marjoram

Preparation

Boil the peeled potatoes and the beans in salted water. Chop the carrot, garlic, onion and marjoram together finely, and fry a small oil. Add the potatoes and beans already mashed. Fry lightly for 5 minutes stirring the ingredients together well.

Add the beaten eggs, grated Parmesan cheese, 6 spoonfuls olive oil, 3 handfuls of bread crumbs, 5 pinches of oregano, and pout it all into a greased pan sprinkled with bread crumbs.

Spread the mixture evenly in the pan. Sprinkle some bread crumbs over the top and cover with a sprinkling of oil.

Bake in an oven at 220 C or 425 F for 30-40 minutes. Bake until golden brown and if necessary, raise the oven temperature to 250 C or 500 F for the last few minutes before serving.
