February’s Best Seasonal Produce

When you walk into the produce section this time of year it is hard to tell what fruits and vegetables will taste best. There is nothing worse than paying excellent money for produce only to get it home and realize it was harvested too early, shipped too far and that has taken it’s toll on texture and flavor. It is hard enough to get your family to eat vegetables; mealy ones are out of the question. What really tastes best is to choose fresh, local produce, season it nicely and cook it perfectly. That works every time. But how are we to know what is fresh this time of year? Here is a list of February’s best seasonal produce:

Fruit:
Avocados, Grapefruit, Kiwi, Lemons, Limes, Oranges, Pears , Tangerines,

Vegetables:
Broccoli, Carrots, Celery, Chicory, Endive, Escarole, Green Beans, Greens (kale, mustard, turnip, collard, watercress), Lettuce, Mushrooms, New Potatoes, Onions, Parsnips, Rhubarb, Spinach, Winter Squash, Sweet Potatoes, Turnips, Yams

Broiled Duck with Pears and Watercress

Serves 4

Ingredients

1 ea Duck breast – about 12 oz
3 ea Pears, diced
1 ea Tangerine
2 C Watercress, chopped
1 Can Water chestnuts – sliced – 8 oz
2 Tb Hoisin sauce
2 Tb Rice vinegar
4 Tsp Sesame oil
1 Tb Soy sauce
1/3 C Water

Instructions

Preheat broiler. In a bowl, combine hoisin, vinegar, sesame oil, soy and water. Brush duck breast with 2 Tb of the sauce and broil 5 inches from heat about 6 minutes per side or until done. Stir together remaining ingredients and reserved sauce, and serve.

Roasted New Potatoes

Serves 4

Ingredients

1 lb New potatoes
4 Tb Olive oil
1 Tsp Salt
1 Tsp Rosemary, chopped fine

Instructions

Preheat oven to 400 degrees. Quarter potatoes or cut in eighths, toss with olive oil and salt and roast until done, about 15 minutes.
