Make Vegetables Palatable

Are you running out of thoughts as to how to cook vegetables into something that is palatable? A lot of people, perhaps except vegetarians, despise vegetables and it can be an up hill struggle to prepare a meal that everybody likes.

Getting the response “we like this meal” is unusual in the extreme. Young children in particular seem to dislike vegetables. Whether this is innate from birth or whether this is somehow developed is unsure, but the trend to give children crisps and sweets certainly doesn’t help. Telling a child to eat their vegetables until their plate is clean is not guaranteed to increase their like of vegetables in the future. But, perhaps sitting at the table with your children when they eat and getting them to eat exactly what you’re eating could engender trust and enjoyment of the vegetable meal.

If mother and father aren’t eating the same things as the child then why should the child clear their plate? Perhaps looking for a change in your cooking habits could help. One way to do this would be to use roasted root vegetables, which are simple to prepare and could be kept in the fridge or freezer for as long as needed. The initial step is to roast the vegetables in olive oil and to roast them slowly in the oven. All you need to do is stir them occasionally. This prevents sticking and ensures that the vegetables are coated with the oil.

There are nutritional benefits to roasting vegetables. It is right that the content of vitamin C in vegetables is highest when they are uncooked. But cooked vegetables have beta carotene, an antioxidant, which can be more absorbed once they are cooked. Another benefit of roasting vegetables is that they often taste different to their boiled or raw counterparts.

You may therefore be surprised when your family start enjoying things such as parsnip and turnip. As long as they are cooked properly then they can be quite nutritious and a valuable source of nutrition and enjoyment for your children. Serving these with rice or jack potato is an adequate and healthy way to prepare the meal. Why not place some grated parmesan cheese on top of the vegetables?
