Let’s Wing It Tonight

Do you like chicken wings? Is so, you’re not alone. Chicken wings rate high among many ethnic groups and have become the number one appetizer by choice. People just can’t seem to get enough chicken wings. I grew up on chicken so I ate plenty of it. Some say that when you grow up eating a certain food, that when you‘re older, you either like it or despise it. Well, I guess I was lucky; I still like chicken, so chicken wings rate high with me.

Even though chicken wings are mostly served as an appetizer, this well loved dish can also be a main course served with potatoes and vegetables. I also delight in chicken wings with a fresh pasta salad, and dinner rolls. Are you hungry yet?

Try this tasty and simple recipe for your next party or anytime. Like your wings spicy? Then this recipe is certainly for you. If you really, really feel spicy, add more hot pepper sauce than the recipe call for, if you dare.

Spicy Fried Chicken Wings – It’s A Wing Thing
4 pounds chicken wings
Season salt and pepper to taste
Garlic salt (optional)
4 cups vegetable oil
1/4 cup 2 teaspoons butter or margarine
1 tablespoon hot pepper sauce
1 teaspoon distilled white vinegar

Heat oil in a deep-stout fryer or large heavy pot to 375 degrees. Cut off tips, and separate each wing at the joint. Sprinkle with salt, pepper, and garlic salt.

Place half of the wings in the deep fryer with oil, but do not over crowd. When the wings are golden brown and crisp, remove them and drain well. Repeat the process for remaining wings, season-then fry until crisp.

Once all wings have drained a few minutes, place in a large mixing bowl. Melt butter or margarine in a small saucepan. Mix in hot sauce and vinegar. Pour melted sauce over the cooked wings, and mix to coat the wings with sauce. Serve hot. Delight in Wing Lovers!
