Whole Chicken & Root Vegetable Stew

Fall weather cooking is just a matter of combining the vegetables and the meat
then putting the ingredients into a large stew pot or dutch oven turning the heat
down to a simmer for allowing much needed time away from the stove.

Whole Chicken & Root Vegetable Stew
(Serves 4)

1-2lb. whole chicken, rinsed and patted dry with a paper towel
6-turnips, rinsed, peeled and cut into chunks
4- large rutabaga, rinsed, peeled and cut into chunks
4-parsnips, rinsed, peeled and cut into chunks
1-large yellow onion, rinsed, skin removed and quartered
1-bunch carrots, rinsed, peeled and then sliced lengthwise
6-lg. potatoes, rinsed, peeled and cut into chunks
½-cup parsley, minced
Salt & pepper
1-cup, canned vegetable or chicken broth diluted with 1-cup water
1-Tlb. vegetable oil-canola, olive or corn

Directions: Baste the whole chicken with the cooking oil and then season it with salt and pepper. In a large stew pot or dutch oven place the chicken, add the vegetables and the
broth. Cook on medium-low until the chicken is done and the vegetables are tender.
To serve: Place the chicken on a platter and arrange the vegetables around it. Sprinkle
with fresh parsley. Serve with a small bowl of horseradish and slices of dark bread.

During September to early October most apple varities are harvested and available throughout the year. An simple dessert to serve with a stew is the red tasty apple, sliced and baked then drizzled with a mixture of butter, cinnamon and brown sugar.

Stove Top Apples
(Serves 4)

8-tasty apples, peeled, cored and then sliced
½-cup brown sugar
1-Tlb ground cinnamon
½-cup water
½-stick butter

Directions: In a large skillet add the sliced apples and the water then cover with a lid and cook on medium-low until they are tender. In a small pot:melt the butter, add the brown sugar and the cinnamon. Combine the mixture and after well incorporated pour over the cooked apples. Serve with a favorite whipped topping.
